Hello and welcome to happyhoneycrisp!

My name is Lindsey, I am an 18 year old college student, hoping to pursue a major in dietetics.  I love all things health, fitness and food related, and I need an outlet for my interests! Therefore, I decided to start this blog.  I blog about all of the above and everything in between. Come with me as I explore a healthy lifestyle and find a path to inner peace.

My Story:
I’ve always been a lover of food, but when I was 14 years old I was suddenly plagued with stomach issues.  I was in constant pain, and got to the point where the thought of eating was absolutely disgusting.  I often refer to this time in my life as when I had a “taste aversion to everything.”  During this time I lost a lot of weight, and was suddenly in the underweight category for my height.  I couldn’t gain any of it back, seeing as I could hardly eat.  I saw many doctors, including my pediatrician, a gastroenterologist, an endocrinologist, etc. No one could find a solution to my pain, and every doctor questioned whether I had an eating disorder.  I became very frustrated, since no one would believe I was in genuine pain since there was no visible cause.  The final straw was when I had an endoscopy/colonoscopy which, once again, proved useless.

I decided to take matters into my own hands and embrace healthy  habits by focusing on a plant based diet with the occasional animal product.  I also began to incorporate more exercise into my daily life, which I also believe is key to a healthy life.  All my symptoms improved dramatically and my love for food returned! I don’t like to label myself as a vegan, vegetarian, omnivore, etc. I just eat what is best for my body, and that’s my “diet.”  I believe that everything happens for a reason, and all the issues I went through caused me to improve my overall lifestyle and cultivate my interest in nutrition and fitness! I am thankful for that phase of my life because it led me to where I am now.
